I think the most you could do for CS3 is go to "Window > New Window," and then on the new window of the document, go to "View" menu, and toggle between "Outline, Preview, and Pixel Preview."

from watching the video of the first illustrator i see that they kept the fundamentals in check with each new version and didnt deviated allot
