The skins and the hot oil is enough to cook the meat sufficiently, if they cooked the meat before then I reckon it'd be all dry when re-cooked in the skins.

I'm surprised they don't cook the meat first. I guess you have to get the temperature just right, so the outside doesn't cook too fast.

don't u think carrots is too much? anyway, freeze d spring rolls before frying, medium high, not too high, oil is half-filled and don't overcrowd d pan..

try to lower the temperature down, and make sure there isn't a spill of itsy water in the pan with hot oil, cause that what make the oil exploded.
